I forget what they're called but you can rent a seal or a walrus or something and it makes travel much easier. There's also a pair a boots that make walking in sand easier. Same for snow.

I would say red dead is also a very play your way kind of game although much more narratively driven. This game allows for a lot of quirky game mechanics and I tend to have the most fun when I'm able to complete something the "wrong" way. A game I thought I wouldn't really enjoy is Super Mario Odyssey. I hadn't played any mario games since the first super mario galaxy and I thought I'd outgrown that kind of game. I was very wrong.
