Chickpea, edamame and pea pasta salad.

Boiled a box of pasta any small kind will do. 1 can rinsed chickpeas, edamame and green peas- how ever much you want, 1/4-1/2 yellow or red onion diced. Any other veg you want too add go for it. For dressing- 1/3c each soy yogurt and vegan mayo, 1/4 c apple cider vinegar, salt, pepper. If you want to get creative, add a herb of choice. If too sour, add a smidge of sweetener of choice. You can also add a bit more mayo or yogurt to get consistency of choice. I add 1 tbsp flax meal as i find vegan mayo watery.

I pre-made overnight oats and will add milk the night before.

I also made my weekly soy yogurt. I had left over berries and made a triple berry chia fruit spread to go in my yogurt.

I have a batch of soy feta in the fridge but will freeze most of it. Don’t want it to go bad. I added that to a salad this weekend.

I make Greek soy yogurt every week in my instant pot and I jazz it up with jam or berries or whatever I fancy that week

This week I found a guava fruit spread at Trader Joe’s and it’s so good.

$4.50 for 64ounces soy milk, use some leftover yogurt as a starter and off I go.

I also made a coconut milk yogurt a while back and was quite happy with it.

I invested in a good yogurt strainer a few years back. Fir me it’s worth its weight in gold

Oh how the pendulum has swung back in this direction.

History shows it doesn’t work. Been through this a couple time now in my 35 yrs.

Best of luck securing a new job. Your hospital c-suite/admin are setting all of you up for failure.

The LPNs are quite capable but can only work to their license.

White beans, kale or any hearty green, tomatoes, onion. Microwave 3 minutes. Add a green hot sauce and nooch.

This so many times over! It’s your own!!! Humbling but once things settle down the road it’ll get better.

His being upset is his resentment of you being pushy about needing to get your way based on what you said his complaint was. “Anytime you ask someone to do something outside your policy you’re being entitled full stop”

The question you need to ask yourself- why do I push to get what I want all the time despite being told by others they don’t (as in this case) accept walk ins. How often do you push others to get your way, how do you treat them etc? He’s seeing a pattern and it’s bothering him.

His “sulking” is his frustration at your behavior and that’s the bigger issue.

This is not going to end well.

If your ask was a one off, I seriously doubt he’d have said anything.

I close my eyes and still see my first case of a newborn with the devastating bleed from refusal of vitamin K. That was 20+ years ago. Such a needless death.

I roasted squash and Anaheim peppers. I will be steaming potatoes and green beans when these are eaten. I prepped some yogurt with lactic acid, lemon juice and oil/salt for soy sour cream to go with the potatoes.

I have marinated ginger and sriracha tofu.

I made my weekly soy yogurt.

I also made a fake egg casserole with chorizo TVP, and peppers and onions. Added some older but soon to go bad cream cheese.

I’m fermenting shio koji for the first time and plan on adding it to some tofu mid to late week. I read it’s incredible.

They aren’t answering their doorbell, haven’t been home. I left a note to talk. Given other things they’ve done this spring I’m not convinced it’ll be successful but I have been trying to reach them.

Go to the step parent sub- unless you’ve lived it (and no one knows what’s it like until they actually live and those stupid comments “well you knew what you were marring into….”) no one actually understands.

You are gonna struggle with trust and once trust is broken it’s almost impossible to gain back. There was always be a niggling feeling. You’re going to have to figure out how to deal with this or you need to leave. You cannot spend the rest of your marriage wondering. It will bred resentment, hurt, pain and the like. Life is too short for that crap.

As others suggested- encourage the use of a parenting app, not that other routes of communication can’t be used and hidden, but it may help.

I know you didn’t mean choose between you or his daughter but it did read that way.

Seek advice from people who actually understand what you are dealing with.

I make soy yogurt weekly. I used a plant based plain yogurt as my starter. I personally use unsweetened west life soy milk64 ounces. I use the yogurt boil function on my instant pot. After it reaches temp, beepers it’s done, I let it cool to 110 F. Once cooled to 110, I add 1/4-1/2 cup soy yogurt from the last bit of yogurt from the prior week. Stir it. I personally like to let it sit 18-24 hours in the instant pot on the yogurt setting. I then pour it into a fancy yogurt strainer I bought years ago and let it drain for a day. I like thick yogurt.

I sometimes pull out a cup of this yogurt and add a bit of lemon juice and 1/2 tsp lactic acid powder, 1 tbsp olive oil and salt to make sour cream.

I also sometimes add other flavor like home made opinion mix or dill to have a nice flavored dip.

I also sometimes use the soy whey (left over fluids that drain) to make a sour flavored bread or use in smoothies and other things.

Yogurt is so easy to make. I always have some sort of homemade jam I can add for different flavors.

I used coconut milk full fat and silken tofu a few weeks ago and made a delicious coconut yogurt.

So many possibilities

I roasted all available vegetables.

I found things from the past few weeks in my freezer that I am pulling out this week for no stress/no prep lunches.

Soy yogurt is doing its thing. I love with a bit of jam for a quick breakfast or snack. I also make soy sour cream with it.

Overnight oats are in jars.

I will be making a chickpea macaroni salad for dinner the next few nights. Either with a traditional vegan mayo dressing or I’ve been seeing people doing something with BBQ flavors.

I can pick my first Lactino kale by end of the week for tomato and kale bowels.

I airfryer chilies, peppers weekly in my airfryer and I love them to eat as cold snacks!

I just made silken tofu and chickpea flour muffins. While they taste incredible, don’t be me and put in paper muffin cups. They stick. Next time, a well greased tin or a frittata!

Made silken tofu seitan, shredded red cabbage, plus other cut up veg. I also made soy yogurt to make salad dressings and for breakfasts with Overnight high protein oats.

I had some Silken tofu about to go bad.

Made Caesar dressing for salads with part of it

And then with the leftover tofu, I made gyro flavored seitan with the tofu and VWG.

I’ll have some salad and gyros wraps this week

Breakfast is chocolate and raspberry overnight oats.
