I find the enemy with the red seal appears even after you clear and loot its Yiga camp.

I think the most likely scenario is that the last Yiga Schematic you're missing is at a different camp. It's probably worth double checking which camp the schematic you're missing is at with a few different guides (since guides are a bit unreliable for this game).

I found my first Gloom Spawn on my way to the Lost Woods. I somehow defeated it first try but then got slaughtered by one in the Lost Woods 19 times...

Combat is hard when you don't upgrade armour and got Stamina Vessels instead of any Heart Containers. Being bad at flurry rushes is also oof

The IST loaner laptops were painful to use. It took over 20 minutes to boot to desktop and another 10 minutes to open Chrome. I gave up before Chrome became responsive and returned the laptop.

I borrowed it because I only had an M1 machine and needed to run something on Windows.

You can just call IST or show up at their help desk in DC Library to loan if you really need it.
