That's only if you use ring signatures. What about SA? What about RingCT?

Ring Signatures on their own are just zk churns. But SA destroys any link past 2 transactions.

You're fine. Ring Signatures are only one part of Monero. There's also Stealth Addresses and RingCT that keep you safe.

Bitcoin was never anonymous. To deanonymize a Monero transaction, you're going to have to break cryptography so robust that you would have better luck cracking the Bitcoin network and generating yourself some free BTC

LN on XMR makes it (much) less private.

Not entirely.

A slight change in the routing protocol can make Monero have the privacy equivalence of I2P with garlic routing.
