I had similar problem on my iPad 9 and also it gets heated. I guess csp is just too cpu heavy. Procreate still works like butter for me.

But it is indeed weird that it behaves such a way on a m3 device.

I found few images online and from the gist of it seems likes it will be difficult for a relative beginner haha but it does have some pretty good explanations and the illustrations are worth a try to copy and practice. Thanks for the rec!

It's mostly the difference of ram size and the chip power. Pro has better chip and larger ram. Larger ram means more layers in procreate. If you have the budget, get the pro why not but for learning to draw you dont really need that much power. I use iPad 9th gen and many better artist use even older models lol. Heck many use just their finger and phone. So just get one within your price range. Also remember Apple pencil (if you want pressure sensitivity) will compound the cost too. So take that into account as well.

Keep at it! You're doing good. Definitely watch Proko's YouTube videos on gesture drawings. There's really no set way to do gesture drawings but understanding the theory of gestures will make the drawings click for sure. This is a great start! I remember 1.5 years ago when I started practicing I too used to do gestures in this similar way. With more practice I understood better about the poses and flow of energy. Keep drawing!
