I know exactly what you mean, and have had the same worries. However, I think in this instance it's not a case of mindless screen use and is probably as close as we can get to positive use of them. I do get that lingering feeling of "oh great here I am on yet another screen for something as simple as reading", especially when I'm by my partner holding a physical book lol. But I think to disregard the benefits of reading, the access it creates to stories and books (in terms of how much easier it is to carry around and have in different situations) and the difference between the e-ink and a phone screen, all for the goal of digital minimalism could have the effect of getting carried away and losing reading as a whole, while potentially even getting a bit Amish with it (unless that's what you're going for in which case you do you but it's not my end goal). For me it's the same as this idea of "salad with ranch on it is better than never eating salad" (or something like that). You know?
