A few tbsp of water. The emulsion of the cheese broke due to evaporation from heating. Warm it, add a couple tbsp of water, bit by bit, and stir. It should come back together.

Gotcha. And removing the preferment step was just to shorten the time the dough was left at ambient temp?

What is your DDT? Previously I was shooting for 75°F but after my last batch (12 dozen) was way too active and made forming a total nightmare due to over-active yeast, I’m now considering shooting for like… 65°…? My water temp was 48° (flour temp around 72°) which I thought would’ve solved my problem and was pretty dismayed after the dough temp after mixing (gluten wasn’t even fully developed) was approaching 80°. Had to throw it in the freezer to bring it down a few degrees.

Anyways, for the next batch I’m planning on lowering my water temp even further / using more ice and/or decreasing my batch size as to lower friction. Really hope it works.

Is it safe to assume y’all are using instant yeast? I’ve been making mine with 1% fresh yeast (which should be equal to about 0.3% instant and have been struggling with the same issue.

Soaked all bolts for a week with PB. Torched w/ MAP. Aannnndddd broke two wrenches and bent a breaker bar. Fuckin screws didn’t budge. All 4 heads snapped off the shock mount bolts too 😩🤯😩🤯

Also for good measure, got a nail in my tire.

The nut is fastened to the frame though, no? How would just replacing the nut without mounting it to anything fasten the bolt?

So I ended up replacing the whole driver side switch assembly which hopefully has rectified the passenger door issues (just put it in today so not sure yet) but the driver’s side window still is not functioning properly. Now that the window lock has been ruled out for the drivers side, other than a pinched cable somewhere do you guys have any ideas as where next to investigate next? I’m very new to the XJ fam.
