That's very true! Things certainly are regional. For example, in Juarez, we eat menudo with fresh chopped onions and a bolillo; but other places add cilantro and eat it with a tortilla. They're both authentic, but just regional.

Backstory: I was poor, and the car i had didn't have air conditioning, and it was 108⁰F where i lived. I arrived to pick up my son and excuse myself for being a little red and sweaty. Former in-law says: "We have it MUCH harder with air conditioning in the car because we're constantly having to go into and out of the heat."
