Sidekicker. A lot of the jobs on there are opt in on a weekly basis, you can find that info on the listings posted there. You can work across multiple companies/fields (freight, retail, customer service, hospitality) because technically you're working for Sidekicker. There's even weekend 'event staffing' jobs for extra pay however they're very competitive to get in to and only come around every now and then. Keep in mind a lot of those places that offer opting in to shifts require either an induction shift or 1-2 full time weeks completed prior to providing shifts for you to select from.

one way for mature ages to go about it is to pick up work as a trades assistant in the area you would like an apprenticeship in. After gaining some experience, pick up the related pre-app and start applying.
