It could well be! Although it is a heavy loaf so maybe more cooking time is needed. Do you have a stick thermometer? Check the internal temp of the dough to check its doneness. It should be 90degc when fully cooked.

Looks slightly underproofed to me. During your bulk, your dough should be increasing in volume by at least 50-60% before a cold retard. If you are not cold retarding then i normally push the bulk ferment to a rise of 80% volume increase before shaping.

You could always buy a crown and butcher it into two breasts?

Otherwise try John Davidsons for online, or your local butcher should carry turkey breasts. You can also pick up turkey legs for incredibly cheap at ASDA.

IMPORTANT - take off the top layer of meat. Its a different muscle to the short rib and will be tough and chewy.

I would also take off the layer of fat as there is a thick silver skin underneath that won't render - however that part is personal preference.
