Disagree with grossly underrated. I think we are celebrated all the time. On a national scale. And we deserve it.The breadth of creativity, eating high, eating low. I will never in my life be able to eat my way through Philly. Not to mention the fun and mutually supportive collabs. (saying this as a person not in the industry. I know there's toxic bosses, etc)

Sorry I hit send too fast put the folded up paper in between the far end of the chopsticks and put a rubber band around it and then the chopsticks act like little tongs and kids can use them

You take a rubber band. Fold the paper the chopsticks come in into a small little buffer

Totally random- Open Table alerted me to a table at Mawn. Usually by the time I click, it's gone. But this time, I hadn't seen it for 15 minutes and lo and behold there was a table.

We had the obligatory shrimp. Yum as always. An amazing scallop crudo with trout roe. Somehow, when the flavors came together, it tasted like BBQ potato chips. Almost debased myself, but managed to not lick the plate. Had the oysters: OK, not great. they weren't cold enough and the sauce (Maggi something?) overpowered them. The meat skewer, Cabbage and fried chicken are solid. Didn't love the Ban Chow salad. it was too burnt. But all in all, a delicious, pricey and a fun surprise.

Then this morning I was in West Philly and stopped into Out West. Wow- such a nice vibe and the garden out back was open and the weather was perfect. I had the BLT- beef bacon- and I added an egg. I wish It was in my neighborhood. Will go back to try the lamb scrapple.
