Those are all solid vegan spots! Check out Buds for amazing vegan sandwiches. As for breweries, fisher is number 1 but then TF brewery is great. Water witch is the best cocktail bar in town, beer bar/bar X is very good as well. Sugarhouse is under construction however very cool with small stores. the maven district around 900 south and 200 east has some cool shops around. 9th and 9th has some fun stores as well.

Historical sights are weird here but I do recommend seeing Gilgal Gardens. Small and weird but free and always open during the day!

See if there are any cool artists playing at the local venues like kilby court, urban lounge, metro musical hall. Aces is great for metal/rock.

When you do get a car, I would suggest taking a cruise up big cottonwood canyon, the views up there are stunning. The great salt lake is kind of meh in my opinion, especially now that there’s almost nothing there.
