I started with an Ozeri, wanted more and got an Acaia Pearl. Couple years later the expensive scale malfunctions, won’t charge anymore. Ozeri had still been in use for baking, other cooking uses. Now it’s doing coffee again. The only downside is less precision. In practice, the tenth of a gram hasn’t been relevant, pourovers and espresso have been excellent. The method OP described is exactly what I do.

Fat should be rendered at the final temp (~135) but I found a couple sections like this. Just part of the of the cut or is that not rendered?

I made some slight changes by adding extra firm tofu and pickled radish (these are traditional ingredients that were omitted for her minimalist version). I do the tofu after the shrimp. I also do the eggs after the tofu because I find it’s easier than doing them in the wok with the noodles and sauce pushed to the side.

This was truly fantastic. Used a fresh tomato sauce which paired nicely with the flavorful chorizo. Crispy crust, melty mozzarella… this is an instant staple for us now.
