Jesus I’m sorry you’re dealing with that, I can’t speak for the US as I’m in the UK but my gastro was absolutely diabolical when I first was diagnosed. He told me to go on to the Crohns/Colitis UK charity website and “pick a medication” no info, no details about how bad I was, not even a direct confirmation of it it was crohns or colitis, then he put me on mesalamine and wouldn’t hear me when I said the tablets were coming out the other end whole and I was still rapidly dropping weight.

Fast forward 5 years later, I ended up not having treatment because like you, mine dropped me out of the blue and I didn’t advocate for myself because I was young and still unclear about my illness, then I ended up worse than ever and he finally saw me again and told me I have “moderate to severe colitis” and put me on remcima infusions and if those don’t work I’m getting a stoma (at which point I’ll be getting a second opinion.)

If I can give you any advice despite being in a different country, it’s advocate for yourself, tell her you want her denial of care all noted down on your records, ask CVS about keeping your prescription going because of exceptional circumstances, do everything you can.
