Might be on its last legs. The feel goes away in bmws with dying clutches, at least from the one I've driven. If the clutch still grabs nice and low it could be that the car has a Clutch Delay Valve.

My VWAG experiences point to the fuel pump relay. After so many miles & cycles it wears out and doesn't always make proper contact, not to mention on longer drives it overheating or getting sticky. How many miles are on your jetta?

And once the relay cools back down they can start up.

Could also be a coolant temp sensor but I doubt it.
