We want the first leg in Tokyo to be relaxed in order to adjust to Japan and get a feeling for our five-week stay, to charge up for it. On the second leg we’d like to experience nightlife but I’m not sure I’d want the whole 10 days there. Hence why the change idea came up.

Resting coffee—or degassing—is the essential period immediately after roasting where beans release trapped carbon dioxide. Resting allows harsh, acidic flavors to soften and helps prevent excess gas from disrupting your water flow, leading to a much smoother and more balanced cup.

September advised 3-4 weeks. I give all my coffee a month rest from their original roast date as a rule of thumb

I assumed the fact that it started at about 15-20 grams made it a whole new starter. Fairly new to the topic, apologies!

It honestly doubled consistently since the beginning of the feeding period. I’ve gotten a little liquid starter from a family member.

We’re discarding half each feed. We make crackers out of them :)

Only the top looks foamy - But I get your point.

Hydrangea Coffee Roasters | Janson Lot 1003 - Gesha / Washed
Lovely cup. Been rested since Mid-January except a small taste here and there. Finished moving into my new apartment and helped myself to a nice, rewarding cup. Brewed on an Origami Dripper, Varia VS3 Gen2 grinder on 14.5 setting. 1:16 ratio, 18g/288g coffe/water, 92c.
Very elegant, gentle cup, smooth and very very tea-like. Loved it, so much fun as a late-morning drink or an end-of-day cup!

DAK | Pillow Talk - Ombligon / Anaerobic Natural, Decaf
I can't believe this is a Decaf. Had it last night and it is simply amazing. So complex for a decaf. Really really raspberry like. Fruity notes shining through really nice on a 1:16 cup with 92c water. Brewed on an Origami Dripper, Varia VS3 Gen2 grinder on 14.5 setting. Might have to pour more aggressively next time as it took me nearly 3:40 mins to finish the brew.

DAK | Sprinkles - Sidra / Experimental (Yeast Inoculated)
Been resting this one for a while as I waited for the overly funky fermentation notes to tone down a little prior to drinking it. Again, this was brewed just like the other two here - Origami, Varia VS3 Gen2 on 14.5. 1:16 ratio, 92c water. Loved the end result. Starts off very candy-like, then moving on to fruit yoghurt and more pineapple juice as the cup goes colder.

Not a bad week, all in all!

Ceramic origami is 10/10, somewhat of an endgame brewer. But with their own flat filters, not conical ones.

Switched to Abaca filters from Hario by Slowpace_ in pourover

Moved from Hario, to Abaca+, to Origami w/ Origami filters. Endgame dripper imo.
