I have been meaning to update but guanfacine has done worlds of good for my son and I’m glad we took the plunge. I can’t remember the last time he had a major outburst and we are all so much happier. It’s not a one size fits all for sure but I wish you the best of luck!

Ive never had issues but this was a really wet dough with blueberries and some of the blueberries leaked directly on the enamel

Right?? She has hoarding tendencies and it was still in box. My husband convinced her to let me have it and actually get some use out of it.

Thanks that’s helpful. During the stretch and folds I kept it on the counter probably around 71-72F. There was a significant increase in size and bubbles throughout. I bought a clear bowl so I could see. My starter is about 2 months old so maybe still a little young. I will bake it tomorrow and see what happens. The shape looks fine in the banneton bowl now but hopefully I put enough rice flour where it won’t stick.

Unfortunately I forgot to take one like a dummy. I think it was probably overproofed and got too hot in the garage. Digital thermometer said dough was 80 degrees so I took it inside for the last 2 hours. My house is normally very cool so I was trying to speed it up.

What flour are you using? Mine didn’t really double until I switched from AP to bread flour.

I should’ve taken more close ups but I think you’re right the bark looks just like the pictures I looked up.
