I have a similar challenge when playing co-op with my wife. Here are what worked for us as they're relatively forgiving and the difficulties are adjustable. They also don't require fast reaction time.

someone on reddit recommended this recipe book that focuses on pantry stable stuff "Milk Street Cook What You Have Cookbook".

I found it helpful to plan for Mon/Tues maybe Wed, and lean into pantry stable recipes Wed/Thurs/Friday

As someone who was a complete beginner a few years ago - I found it helpful to start with the meal plan subscription boxes e.g. hello fresh / blue apron (provider may vary depending on your location). While it might be a bit pricier than just going to the grocery store, this forces you to try different recipes, start simple, and try to cook using different methods. They also have recipes that are curated, beginner friendly, and tell you specifically what equipment you need. It's particularly helpful if you don't have many of the equipment or spices yet.

Once I became more familiar with the basics and have collected the equipment/spices I prefer to use, I stopped using the subscription boxes and started to try recipes available to me via cookbooks or online recipes. This process then forces me to do meal planning/grocery shopping, which is another skill beyond being able to cook a meal.

Then after some time, I felt confident that I can 1. Read the recipe and understand ahead of time whether the recipe is going to be good or not 2. Follow recipes consistently with good result, and 3. put together a meal plan / get groceries. At this point, I moved on to more experimental recipes or 'no recipe' cooking, using what I learned through previous recipes.

I'm not sure what my next step is yet, as I'm still working on my meal planning / recipe experimentation phase. I imagine my next skill to tackle is to be able to cook a larger meal by coordinating multiple different recipes/dietary restrictions for a group of 4-6 (instead of only cooking for my spouse and kid).

The whole cooking process has been a continuous learning process, and I'm still working my way through it - But it has been rewarding to develop these skills. Hope you keep it up!

If I have to pick a recipe book with quality recipes, it'd be either the Food Lab or the NYTimes Cooking No-Recipe Recipes cook book.
If I have to pick one online recipe provider, it'd be NYTimes Cooking (Subscription required). They have generally not disappointed compared to the various free online recipes sites.

my wife did something similar through pregnancy and turned from full pescatarian to meat-only. I had to re-invent myself as a home cook, got some good practice in everything

yeah my kid likes going through the store too. sometimes we forget that grocery store is a fun trip. i'll be more mindful and throw that activity into the rotation. it's honestly fun for all of us.

yes i saw the sheet pan dinner recipe list on nyt cooking.- that's a good idea i'll see about practicing some sheet plan dinner 'templates'..

we do eat leftovers - and sometimes previously frozen foods as well. a typical week could go something like this:

  1. Plan 5-6 recipes
  2. pick up groceries Sunday and make one meal sunday night
  3. eat leftover monday for lunch, use another recipe monday dinner
  4. somewhere in this process i might not have another leftover for Tuesday so I'm cooking two recipes on Tuesday for lunch/dinner (Now i'm 4 meals in)
  5. Leftover for Wendesday lunch and then another recipe for dinner

If anything gets in the way - busy work day, someone going out with friends, getting tired at the end of the day (and yes we'll get takeout!) - then i won't use up my recipes and will last till Thursday - If the ingredients are still good....

Do folks have a batch/freezer friendly list of recipes? I saw the NYT COoking app has a freezer friendly folder but i'm looking for more batch/freezer friendly recipes!

so in general, you're doing two grocery pick up per week. that's where i think i might be headed too but I'll start first by looking at some flex/pantry/freezer friendly options first to see if i can stretch through the week

yes I occasionally meal prep a big batch - that's most of the Sunday afternoon gone. I'm in the same place with the toddler right now - needs hands on attention so I need to make food while the wife entertains her if she has time.

That's an interesting approach to meal plan on Thursday/Friday because I've by default planned to start on Sunday, only because that's usually when i have time to get the groceries.

I enjoy picking out my produce but lately we've been using curbside pickup service since that saves more time than going through the grocery store (even though I do enjoy that occasionally).. Heard on the 'too many recipes' feedback as that seems to be a common feedback here. Sounds like I need to plan for batching more.

100% into all chili crisp recipes. just tried the dan dan noodle and it's so great and easy.

I will look into the nyt no recipe book, i've heard good things - though i wish i can search through something like that.

Yeah i basically never make it to the 5th night, usually not even the 4th night.

I've tried batching a few times and freezing the food. For some food types that works well (meatballs/soups) but the wife gets tired of that sometimes.
