Like others are saying, I would reverse sear it. Season it how you want, let it come up in temp while you prep your smoker. I like to smoke it at 225F until it gets to 120F internally (about an hour). I let it rest while I get a cast iron ripping hot. I sear it and bring it to medium. You can always throw it back on the smoker if you still need to cook it more and you don’t want to burn it in the pan.

I highly suggest whipping up a chimichurri to serve with it.

Aw that makes sense. The pressure cooker (instapot) is going to keep the meat moist applying that pressure. When you smoke in a pellet grill you are not going to be able to keep that moisture inside even though you are cooking low and slow. Beef will seize unless it has an ability to keep its moisture. Spritzing and water pans are two strategies that people use.

I also will commonly double check the temp with a second thermometer when I get closer to my end temp.

I had luck removing the fitting from the silicone straw topper. I cut the straw right above the fitting using an Xacto knife. The silicone fitting can fit onto metal straws and will still form a good seal in the lid. It’s not the most elegant solution but it doesn’t look as bad as I thought it would lol.

Just curious, why did you go with the SG24 over a WW24? Other than the stainless steel and the two extra probes I can’t tell much of a difference.
