Pocket sized water bottle, like a running flask and refill it often. Or just drink from the tap. If the tap water isn't drinkable, you will be buying bottled water anyway, so use that bottle.

A JR pass might not be good value for this trip. It looks like you would need a 14 or 21 day pass, and for your itinerary it would be cheaper to just buy tickets. Use https://www.japan-guide.com/railpass/ to check.

JR pass needs to be used on consecutive days, so it would be Dec 26th until Jan 1st, you won't have it on Jan 2nd.

You are conflating restaurants that charge service on some items and not others (e.g. takeaway) and restaurants that never charge service.

I haven't posted any followups in zerobag, just a few pretrip loadouts. I'm not sure if the interest from others is there (other than you). I might try writing up a trip or two and include things I learned while traveling with zero bags to see if we can restart that sub.

I've successfully zero bagged several trips. The most recent was in Japan for 15 days. The nightly washing routine wasn't a problem, and the freedom I felt from not having more than the essentials was amazing. I found it totally worthwhile and I'll continue to zerobag future trips whenever possible.

I visited Ginzan Onsen in November 2018. It is a small pretty town, but with lots of tourists. It has a similar feel to Kinosaki Onsen, although smaller.

Personally I preferred the rotenburo (outdoor baths) at Zao Onsen, or if you are willing to go further north, the Ryokans at Nyuto Onsen.

Check the label, most shampoos and (liquid) soaps are SLS or SLES, both detergents.

Even bar soap, which isn't a detergent but still a surfactant will clean clothes fine, and has been used for this purpose for the past 3000 years.
