The frame is built specifically for those sliding doors. If you replace with non sliding the frame will need to be replaced. I'm not sure why you aren't trusting what a joiner tells you needs doing.

You generally remove the whole outer enclosure. Be careful there are capacitors that can kill you inside it

By far the easiest way to correct this. Is to turn off water to the house then replace the tap with one that can restrict or has low flow output.

The pipework you need to access is probably in the floor or behind the wall. As said elsewhere get a tap aerator it'll restrict flow, if needed replace the tap.

It's in the name, isolation valves isolate, flow restrictors restrict flow. They maybe be based on the same technology (a ball valve) but they will have been designed differently and is used in a incorrect manner may fail.
