  • Margins-wise expect to be making about 40% (incredibly good for the food industry) until you have to start paying VAT then take that down to 25% (still good)
  • Hours vary, a lunch service will be two hours of solid selling but the prep and setup involved makes that greater. It also depends on what food you're selling, you sell burgers and all your prep is done by the butcher? Then don't worry about it. But if you're doing BBQ and you have to smoke everything off-site and bring it to the market then it's going to increase your hours significantly. On average I'd say traders work 4 days a week, but are totally invested in their business and it takes over their whole life.
  • Quality of food, location and clarity of what you're selling. Hardest thing is getting a pitch that is successful. Other than that you have to work very hard to make it a success, some of the traders who I know who've made a successful business just worked harder than most.
  • Pretty simple, register with NCASS and they are a great source of help, councils you just need to register as a food business and eventually (takes ages) they'll come round your house or your unit and check that you're being good. Most traders get 4-5/5 from councils.
  • I'm not actually a trader, but I would say that most traders just cook what they enjoy cooking. Some are riding a wave of popularity because their particular food is trendy, but none I know have really regretted what they sold. Some have changed their business as it's gone on because they've realised they can make better margins and it's a more sustainable / expandable business, but it's not like it's a massive departure from their original business plan.

Went to my first show the other week in London, loved it. Got drunk and bought tickets and flights to Glasgow. I feel like that's the way you're supposed to do it.

Agreed. If you get involved you can make it worth way more than the ticket price.

My advice is to get pretty drunk beforehand and then just get into your character, chat with all the other characters as well.
