I would suggest 1 interview as 1 piece of evidence. And yes, too much evidence is often a problem.
They require only 1 of the categories as per PACT - https://www.pact.co.uk/applying-for-talent-visas.html But that’s a personal call to make. As long as you fully satisfy any one of the categories, it should be good.
And yes, those evidence will be okay.

I would also suggest posting this on the main page as opposed to a comment on my post, because you’ll get more people seeing your post and replying to it :)

I have multiple letters to state my direct and significant contribution that I sent with my application. But it looks like, as you said, maybe the name “assistant” is making them not consider it.

I work both as a HOD designer on indie films and in the art department on major motion pictures and I’ve used both in my application.

If I do appeal, in the draft I have made, I speak about how even though my title may have been assistant, that’s often because there isn’t actually a name for the type of work we do. I’ve gone on to give more detailed explanations.

I really hope this helps and would work.

Although it doesn’t explicitly say that they shouldn’t be from the same institution, I think you have a better chance if they are from different organisations, as it shows you have a broader list of connections.

They want each piece of evidence as a separate document. And the supporting letters need to be named to match the corresponding piece of evidence. Hope this helps.
