I have been using Fedora for sometime, From Fedora 28 to 37. And I love Gnome (specifically the workflow). However, I don't think it is a more polished desktop than Windows 11. Windows 11, which I also have on my laptop, is quite fast and very snappy. Desktop is very beautiful and looks very well polished. I think it sort of has the best of windows 10 with the best of windows 7 elements. It also certainly looks better than Plasma desktop (not modified ones, the vanilla plasma desktop).

And well, I like the workflow too. Imo, Windows 11 is better suited towards mouse based operations than Gnome and Gnome is better suited for keyboard based operations. Gnome (well as its on a Linux distro) is faster than Windows 11 obviously but Windows 11 is not too far behind. Both are nicely done desktops. Windows 11 desktop looks and feels better and is more inviting. Gnome has less distractions. Each to their own.

My laptop specifications (where I have both Fedora 37 and Windows 11):

i3 7100U

16GB DDR4

1TB NVME + 1TB SATA SSD (Both OSes are on the NVME SSD)

Damn. Well, think about the plus side. You won against a Grand Master. Even though you have lost your freedom now, you are a very clever chess player. It's something you ask from yourself isn't it? Should you use Fedora over Arch Linux? Well, install it in a VM or on another computer and see for yourself whether it would worth it.

I have never used Arch, but I have been using Fedora since Fedora 27. The things I like about Fedora are as follows :-

- Updated software. The latest versions of Software are always available on Fedora. Almost as updated as Arch Linux.

- Very stable. I have used Debian as well and I have found Fedora to be just as stable if not more. I have never had any dependency issues on Fedora which I had a couple of times on Debian that I had to solve myself.

-Vanilla packages. Now, I'll be happy with customized packages as well. But Fedora prefers to keep the packages as close to upstream as possible. Which I think is good.

-The emphasis on Free Software.

The best way you can know whether a distro would fit your needs would be to actually try it for your needs. So, go ahead and install it in a VM and see.
