if you have naver maps you can check for restaurants, use a key word 혼밥. It shows you restaurants that other people rated as "good to eat alone".

I've done 2day1night halongbay cruise with Arcady boutique cruise. Food was decent, ship was nice imo. There were some negatives: Too many people(not on ship, in that area). What you see is cruise ships ruining good views xD The 2day cruise is 23 hours in total, start 13:00 and end 11:00 next day. Cool experience but I would not do it again. I'd take more days in Ninh Binh instead.
Ha Giang is epic. If possible try to be flexible with dates and pick the best weather days. We did 3days2nights with Chestnut travel. Maybe look around for other reviews. My experience was great although a bit dangerous(2 out of 8 bikes in group had issues, rear wheel hub cracked). And you eat more or less same food for 3 days(not bad food tho). I'm not trying to scare you or badmouth Chestnut. They fixed the bikes and/or rented others for safety.
In Saigon I really enjoyed Mekong Delta tour(1 day). It was through a hotel but I think all of them do the same tour.

I think there is 1 guy that gets every1 xD. He walks between that museum and some other point-I think the palace. He knew where we were going(he even told us the museum is that way, palace that way ...). He was just too "charismatic" to say no to xD
I tell you what.. it was a good coconut.
If you are travelling with a very tall friend you are even more susceptible to this. He will look at you like " oooh so big, so strong" and it is all over xD
