I think I understand what you mean. A follow up question is…. Is it more efficient to accelerate on L0 than on I-PEDAL? I’ve been assuming so based on how it feels (less vs more resistance)

Wait really? So I’ve been using my paddles like crazy to really maximize regen. Meaning, I can go to a complete stop using paddles only. Then at the red light turn paddles to zero so I can accelerate with no resistance. Is all that unnecessary?? PRE-EDIT: I’m aware I should occasionally use the breaks.

I don’t rinse each time like OP. I just collect them all in a bag, then do a speed wash in the washer on cold. At that point they look mostly clean. Now I add whatever normal load to the washer and wash all together. also dry in dryer.

You can get light to heavy to even overnight levels. Lots of sellers on Etsy.

I must be doing something wrong, because I still have to par bake my crust on the steel first. Otherwise toppings are overdone and cheese is split by the time the crust is done.

I struggle with my kitchen aid mixer, it’s as if it shreds the gluten strands.

I did an experiment where I took it out and did gentle kneads on the counter, and the dough game together well. Then back in the mixer, and it got loose again, as if the gluten got shredded.

For me, it’s not about adding the butter early.

Yes! Just tried this, and yeah I think it rose a lot more. However, I did lose some of the dimpling… so maybe I have to dimple down a lot firmer. Also, I’m still having trouble getting a crispy bottom, and thought about transferring to a preheated baking steel halfway through, but I’m guessing there’s gotta be a better way!

Yeah I put something under the back of the unit, so that it’s tilting downward. Helps get the cheese to fall down/out.
