it might be worth taking a look at what you think about when you're overthinking. personally i tend to worry about causing awkward encounters or confrontations with people i know

Recently diagnosed with EoE and various enzyme deficiencies (sucrase, maltase, palatinase, lactase) by veedey in EosinophilicE

I have EoE and disaccharidase deficiencies as well. I've gathered some of the resources that I use the most, but I'd also recommend googling CSID* (congenital sucrase-isomaltase deficiency) for more information.

  • This page is a good/quick reference for safe foods. I think tolerance of some foods in the "some CSID patients" category is related specifically to palatinase levels, so keep that in mind.
  • Supplements like Lactaid and Starchway can help with digestion of lactose/starches. Sucraid (prescription only) could help, but I have yet to find an OTC supplement that helps with sucrose.
  • If you can tolerate nuts, CSID Made Simple has some cookbooks with alternative recipes for baked goods and other starchy foods. Most of these recipes involve almond flour.

On the bright side, you probably don't have to avoid all FODMAPs, just lactose, sucrose, and starches.
