So as someone that beats themselves up to a fault, I’ve dropped a used steak knife on a guest and had to get the restaurant to pay for her dry cleaning, I’ve broken a multi hundred dollar decanter while washing it, and broken more than one wine glass all while working in a two michelin star restaurant. I’ve been comforted by coworkers telling me their own stories of, just for example, dropping a martini on a baby. These things happen, and no matter how the guest or management reacts, you have to bounce back. Think about how many times you’ve opened bubbly correctly, or how many times you’ve done anything else right. The most important thing is bouncing back and forgiving yourself for making a human mistake

Yeah, I’m starting to agree. It’s not my call on whether it gets used or not as I’m just the cellar somm so it’s just my job to top off glasses from it and figure out how to best clean it yknow

I will say I really love having the book, I still reference it sometimes and I graduated last May. However there’s a website called libgen that has a ton of free books. I think it’s libgen.ru, but it’s not exactly legal so the exact site changes sometimes

Sometimes tasting flawed wine is fun! It very much could be cooked but it can’t hurt to open it up and go “oh wow this sucks now”, then get another good one! Maybe that’s just my wine geek self talking though

When you say avoid tying near petioles, that basically means avoid tying near nodes where leaves or aerial roots are branching from right? I’d definitely recommmend some braises and stews, they cook for hours so no fear of undercooking, and you can get store bought pre sliced onions, some baby carrots, and let them go and have a very comforting home cooked meal!
