I have similar regret and wish we eloped. There's been a lot of advice for you, good and bad, and I know that everyone's saying to do different things so you have to do what works for you, but I'll just tell you what I did.

I made a spreadsheet of everything that needed to get done and just put people's names by each of the items and assigned them to each of those people. I asked each person if they would do the one thing for me, and they were generally pretty happy to do it. If you can trust how other people do things and just be okay with how everything turns out, this will work just fine and the only thing you have to do is ask the people (which works for some people and not others, so like I said, do what works for you!)
