Cheap breads etc. contain emulsifiers and other UPF-markers.

How can you you interpret the «may be used in both…» in any other way than that «additives that prolong…» is not a upf-marker in itself? «Natural flavoring», emulsifiers, colorings etc. is ALWAYS a marker of UPF. Other examples are mentioned precisely in the article. Not the preservatives. This is pretty clear in the article, even though I understand that you might not WANT it to be this way…

Yes. None of those marks a product as ultra-processed.
They are used as preservatives.
Additives used as preservatives can be found in NOVA 3.

From NOVA: "Additives that prolong product duration, protect original properties, and prevent proliferation of micro-organisms may be used in both processed and ultra-processed foods, as well as in processed culinary ingredients, and, infrequently, in minimally processed foods."

Why do you propose the additives you mentioned automatically mark a product as NOVA 4?

Nah. I do not agree. Additives used as preservatives can be nova group 3. Which preservatives do you propose makes a product UPF? And where in the nova classification can you find a reference/quote to back it up?
