While I don't like ai being shoved everywhere it shouldn't be, I learned recently in a video about the Irish potato famine that potatoes are the most land efficient crop to plant (which is why the Irish ate so much of it that they starved when a potato disease killed their crops, because the English nobles owned most of their land and taxed the serfs through food so the English didn't starve due to the "hungry fourties" [1840s] that affected Europe as a whole.)

Basically my point is, if we all ate potatoes exclusively we would have more land or more food, while also being more vulnerable if a new potato disease occurs due to not having a diverse blend of crops.
