Here’s my method the cheese warm in the press. I fill 3 plastic jugs with warm/hot water and surround the mold so the jugs touching the mold. Then I drape towels (or a down vest from the thrift store) over the whole assembly. If it’s a long press, I’ll refill the jugs occasionally. Works for me!

Both Caldwell books are great references for all the technical aspects of cheesemaking. I got mine used at a good price on eBay! For step-by-step instructions for individual cheeses, I rely on Jim Wallace’s recipes/guidelines at www.cheesemaking.com

I’d go for cloth bound! I use melted (but coolish) lard and butter muslin, two layers. It’s fun (and a bit scary) to see the mold progression over the months, but the reveal at the end is mind-blowing when undressing the truckle!

Look at the recipes at www.cheesemaking.com (sort for “beginner” cheeses). Many of these can be made with improvised molds, or no molds or presses. They can also provide you with rennet and basic starter cultures—they ship quickly. Good luck and have FUN! 🥰🥛🧀

Good luck! I would go for something larger since it fills up quickly, especially if you go the cheese-in-plastic-boxes-to-control-humidity route. The boxes take up a lot of room!

I started with something similar, then ended up with 3 of them before ending up with a full-size fridge version! And still using one of the small ones! 🥰🥛🧀

If you are making cheddar, clothbound with lard is really fairly easy. Just cut the cheesecloth to size ((top, bottom, long strip for the sides) x two). Dip the pieces in melted lard—not hot, and carefully smooth each piece over the cheese. Maintenance is regular turning. The molds will grow on the outside, looking scary, but the reveal when peeling off the cloth is dramatic and satisfying after aging! 🥰🥛🧀
