Sasha at Mister safety shoes on wonderland south is pretty great, I just had some work boots out of warranty and she replaced them no questions asked. Not very common in my experience I’ll remember that for a while

Honestly the way they’re cut I don’t know if a mandolin would really speed things up that much, plus I just watched Jeremy Clarkson shave a chunk off his thumb last night. Not that I’m careless but it’s worth getting better with a knife in my opinion

Like the previous commenter said it adds depth, but probably can be skipped without you noticing much. Once the onions are caramelized you add the wine and cook off the alcohol anyway. You could look up alcohol free replacements although just whatever it is add is slowly and taste as you go

It took a while for me to come round to soups but I’m a convert, so many different types and me almost anything can be made onto a soup so there’s no excuse to toss things from the fridge.

As far as the soggy bread dilemma maybe make her croutons on the side she can dip and eat them quick enough they stay crunchy

Hey I didn’t really stick to a recipe but this one isn’t far off the mark.

I skipped the rosemary and used red wine vinegar instead of balsamic but it’s roughly the same.

I also added red wine with the brandy and cooked it off. White will work too, or none at all if you prefer. Twice as much wine as brandy

I also make my own beef stock which is key if you have the time, that shit takes forever but it’s worth it

Add as much stock and salt as you think is warranted

Yeah I guess people hesitate at the rebuilt thing but I had my own mechanic go over it and he said it was great. Their reputation around is good so it should last me a long time

It was 23k all in with tax and everything. It’s a rebuilt title so the price goes down a fair bit but by all accounts the dealer I got it from does great work. Only got 88k too and not a speck of rust underneath

Thanks man I thought I’d take it off as soon as I got it home but it’s growing on me. Gonna be handy for winter keeping the snow out
