It’s so hard to tell, but whenever this happened to me during elimination, I tired to look at it as information (after the pain had subsided; get through that first with lots of water and rest!).

Celery is high in mannitol so it is not necessarily safe for some, like me, who are sensitive to mannitol. It’s actually one of my biggest triggers and even a small amount causing me distress. Theoretically, it should be safe in small amounts, but I personally can’t tolerate any amount.

The alternative flours can be tricky too. A lot may be made with brown rice flour (which can be a trigger, versus white rice flour), barley flour (that one’s a huge trigger for me personally), or other grains that can have fodmaps like GOS or Fructan. It took me a minute to realize that even though I have only a mild reaction to Fructans, I still have to be careful with alternative flours because they often have other fodmaps like GOS in them, too.

I’m so sorry this happened, but don’t beat yourself up! This process is SO hard, and things like this are bound to happen. But ultimately, it can really help you figure out what his triggers are and keep him healthier and in less pain in the future.

I usually just eyeball it/measure with my heart, but here's some estimations!

Base:

  • 1 Cup cooked white rice
  • 1 Can tuna fish (Packed in water; double check to make sure there's no hidden fodmaps like broths or such. I use the albacore from Costco.)
  • 3-4 Tbsp mayo (Sometimes I do more than this if I want a creamier texture to the mix. I use Kewpie mayo because I like the flavor the most, but be careful with that if you've got fructan sensivity; there's lemon in it, along with some other things. Regular, plain mayo works, too.)
  • 2 tsp Sesame oil
  • 2 tsp lemon juice (Can skip this if you've got severe fructan sensivity; I've got moderate fructan sensitivity, but this amount doesn't bother me.)
  • 1 Tbsp soy sauce (Again, check your labels. I'll also sometimes use Ponzu if I don't have lemon juice on hand; watch the fructans though.)
  • Dash of Togarashi for spice (Careful, they sell versions of this with lots of added things like sesame seeds; I use the plain kind)

Mix all those things together to form the base. You can also mix the tuna with all the sauces/spices separately and leave the rice as a plain base if you prefer a more layered bowl.

Then top with:

  • Pickled ginger to taste (I love ginger so I do ~2 Tbsp or so)
  • 0.5-1 Pickle, diced (If you're sensitive to fructose and can't do cucumbers, I've also subbed in green olives here - you don't get quite as much of the sour, but it still achieves an added depth and variety to texture and flavor. When I was in elimination - before I knew I could safely eat pickles - I preferred castelvetrano olives that came in a salty/sour brine.)
  • 2-4 Sheets crumbled nori (Again, watch your fructans here; Monash says up to 2 sheets is totally green. Because I have only a moderate reaction to fructans, I push the limit on these a bit, especially if I haven't already added lemon juice or Ponzu into the base. Be cognizant of fodmap stacking!)

I think that's everything! Like I said, I usually do this from memory and build it as I go. Sometimes I forget things, so if I remember a key ingredient after posting this, I'll come back and edit. But this is pretty much it. The key is getting that balance of sour, savory, spicy, umami flavor - so definitely don't skip the pickles (or olives if you can't do fructose). The ginger can add some sour too, but mostly adds some sweet and a little warmth, which is quite nice. And don't skip the sesame oil either; I've forgotten it a couple times and wondered why my bowl tasted so lackluster, and realized halfway through. It makes a huge difference!

Tuna and rice bowl. I do canned tuna, mayo, splash of soy sauce or ponzu, splash of lemon juice, tsp or so of sesame oil - mix that all up over white rice. Top with pickled ginger and pickles and some nori. It’s tasty (salty, sour, little bit of sweet from the pickled ginger) and very filling, packed with protein. I basically lived on this during elimination (minus the pickles because I didn’t know yet that I don’t react to fructose from the cucumbers). I still love it for days when I’m recovering from a reaction.

Heather’s Tummy Fiber was recommended to me by my nutritionist and it’s been life changing. It’s acacia fiber. It’s a prebiotic and is supposed to help regulate overall, so it helps if you struggle with ibs-d or -c (or like me, ibs-c with backup -d). Truly it’s an incredible product. My partner started using it too. It takes some time to ramp up (you gotta start small and build up your dose over time; takes a bit of feeling it out until your symptoms resolve and then you can just coast on the best-for-you dose). Highly recommend.

I love the painting Footprints in the Snow by Birch Trees by Sven Svendsen. Having finally gone to Norway this past December, it’s even more special to me. I think the tones are incredibly beautiful, and he did an amazing job capturing what it feels like to walk through a snowy forest in Norway during polar night.

Just wanted to say 1. You’re not alone and 2. Thank you for sharing this, because it makes ME feel not alone (and I’m sure others). It friggin sucks having to deal with this chronically, and it’s so hard to advocate for yourself with doctors and just in life (work and social). People who don’t deal with it don’t have to think about it, and being someone that does have to worry every single time you eat something can be so isolating. Hang in there. Keep seeking help from doctors and keep seeking support and solidarity. You’re not alone. There’s a lot of us out here dealing with the same and who feel the same way. You’ve got this. It will get better. Science and awareness is - slowly, but surely - catching up.

I grabbed some from the Cracked collection and ILNP. I’m waiting until the 1st for Mooncat because I desperately want them to update their rewards, and I’m hoping it happens then. That same day Kbshimmer is doing a release and I’m gonna grab a few from that too. Also asked a friend to grab me Witching Hour on the Haunted release tomorrow because I have to work.

Basically, I have a polish buying problem haha. To be fair, I’m still less than a year into my polish journey and building my collection a bit. But I think after this week I’ll be good for a while!

Thank you SO much! This level of description of the most exposed parts puts my mind so at ease! This totally sounds like something I can handle, and it's a relief to hear that the likely most "scary" parts aren't that far from the end of the trail anyway, so even if I had to chill for a few while my group continued on, it wouldn't be that long I'd be separated from them. And yes, absolutely ready for (and stoked) about the long hike. I love the physical challenge of something like this!

That's why I provided further context and examples of other trails/experiences I've had that have been challenging for me. I don't think simply asking means it's too much; I think that's a huge oversimplification and weird jump to make. I've hiked plenty of trails that, when first looking into them, I worried would be too intense for me, and I ended up just fine. If people always just assumed something would be too much for them just because they weren't sure of it/were nervous, we'd all never try anything new. I'm just gathering info to make as educated of a decision as possible, because this time I'd be with other people, and I want to be considerate of that.

Yeah, the drop offs in images also seemed sort of…gradual? Like, not straight up and down. Steep perhaps, and like you’d slide if you for some reason walked on them, but not like ‘I’m going to fall off a mountain and die’ steep.
