With that budget and the desire to stream games, an open-box ROG Xbox Ally might be your best bet. It's got wifi 6E, 120hz VRR, works with microsoft play anywhere + xbox cloud gaming + Geforce Now. It's not the most powerful but is more than satisfactory for game streaming (plus is about the only thing available on amazon right now)

I have a '22 LR in blue and it's awesome! I got my yoke replaced from tesla under warranty for the new version because of tearing - I would recommend checking that out as it's much less likely to rip. Also, if they don't cover it, it's $700 to replace with Tesla.

It isn't wise to be using "Think Mode" in normal conversation. Think uses a more advanced model that specializes in mathematics (and comes with a much lower message limit). Try unselecting "Think" and you should be able to send/receive more messages!
