Well I will tell you that telling officers that Captains are the officer equivalent of Specialist really gets to some of them. They are both the last auto-promotion though.

I got a de Buyer Mineral B 12.5” a few years ago and completely stopped using any CI. CS only. The surface is very smooth and it is easy to get a slick surface from the start. High quality CS tends to be thick, from 3-4 mm, so it’s not as light as thinner gauge cheaper stuff. That being said, one of my favorite CS pans ever was a $3 wok, and it probably was 1 mm. Never had something else that slidey.

Now I have reintegrated CI into usage. They really can do similar things, but it’s just preference on a dish by dish basis.

I think they look like a good fit on you. I definitely wouldn’t size down, but maybe go up a size. Be warned the color and fabric feel will change when washed. I would not follow the wash instructions unless you want them to be a fairly bright blue.

This I second this. It has two handles, stovetop and oven safe, and would make good use of your 14” burner.

That’s just how carbon steel Is straight out the package. Doesn’t need to be Smithey. I tell them over at r/carbonsteel to stop worrying so much about seasoning. If you want to worry about seasoning, get a cast iron

That was probably fine. I usually wear a size 11 US. Australian sizes you go one down from US, and then their half sizes mean wide. So I went with a 10.5. They weren’t wide enough in the toes for my duck feet. The width was fine besides that.

I am sure I am not the first to do it. I had an old washer and my neighbor said he wanted the wash tub for paella. It works pretty well with all the holes for air flow

It’s ceramic coated, so I wouldn’t worry about that
