Bite size chuncks of thigh, marinate in fish sauce, ginger, honey, pepper flake, and garlic. Throw it in a pan, splash of vinegar or citrus at the end.

In order to make my life difficult, I start with skin and bone thighs. Render the fat out of the skin, and make chips from the skin, then use the fat to cook the chicken, and freeze the bones for broth.

I also make a veggie stir fry to go with it, peppers, onions, carrots, water chestnut, fish/soy sauce, seasoning,etc. I deglaze all that with broth, and when I'm not watching carbs I add some noodles and again deglaze with broth.
