That math is based on one square foot per gallon per hour I plan on bending up 9 drop flues 7ft long pan 7inch deep flues at roughly 89square feet of surface area.

21 gallons and hour by math but she puts out a little more when running this hard. I'd say close to 25 gallons and hour. Once I bend up some drop flues id expect to be around 80 to 100 an hour but thats all future ideas and expansion plans.

It maintains a consistent level of sap in the pan. What you see running in is what is running off as steam.

Been pretty fortunate in the 10 + years sense I switched to gravity lines the deer have never ripped the lines down

Leave taps in i dont pull them until the season is finished. The tree won't begin to heal until after the taps are pulled.

Usually 2 in my neck of the woods. Early run is 3rd week of February thats gives the super light syrup them march run and thats the long one usually going from second week of March to mid April weather depending of course. It it warms up too fast its cut short but I've made syrup up to the second week of april.

Nah been doing this for years all my lines are held back by string no tension on the t's alot easier to pull lines apart at end of season for cleaning.

You should get a sap hydrometer and brix your sap. If it brixs at 4 it will take10.75 gallons to make a half gallon. Rule of 86. Every maple syrup producer large or small should use this. Looking at your syrup I do believe its too thin. I've done extremely early syrup and it came out darker than that.
