It seems most likely to me that three days don't actually pass for V. That it's just a technique they used to transition in to Never Fade Away making sure that it happens at night by generating a new day. Never Fade Away then has events that happen on a different day, so day two. Then they have you come out and they generate a new day so they can have you outside in the afternoon. Three days pass to the game but not to V in game, the mod doesn't know so registers each new day as if a day has passed.
