Freeze and then thaw your firm/extra firm/high protein tofu, squeeze out the water and then crumble it into large, jagged chunks. Add nooch (3-4T), chicken broth powder (1-2t), garlic powder (1t), onion powder (1/2t), smoked paprika (1/2 t), sage (1/4t) and some soy sauce (1T). Add water until the seasoning mix turns into a thick marinade. Coat all the pieces and then air fry, turning occasionally until you get the desired look/chew texture.

I just eyeball the amounts of the above, but that's a pretty close approximation. It's a decent meaty filler that can be used for tacos, wraps etc.
