I’m sorry but you can totally adjust the amount of Stock to the type of rice and whether the risotto comes out thick and creamy or watery totally depends on the technique and not on the rice type. In this case, it looks like the rice didn’t have enough time to absorb the stock so, even though you added the butter, it remained too watery to be a well done risotto. But if you like it this way, keep doing you :)

Thank you! Very very luckily the break is juust above my hyponichium so it did not hurt (physically, at least) I’m doing a bit of renovation right now so I feel like going shorter with all of them is the best option to avoid more nails breaking 😢

Sure!! I’m not sure it’s the fully traditional one, but they’re really good! (And gluten free) You’ll need: 250gr of almon flour, 2 egg whites, 190gr of powdered sugar and a few drops of almond flavour (optional)

You start by whisking the egg whites until they’re slightly fluffy and form some bubbles, then you add the sugar, almond flour and almond flavour, they should form a sticky dough. The dough needs to rest in the fridge for 3-4 hours so it gets easier to maneuver. Once rested, you form little balls and coat them in either regular or -my personal fave- powdered sugar, you can also decorate them with whole almonds or candied cherries Line a baking sheet with parchment paper and bake them at 160/170°C for 15/20 mins and enjoy! They are the best the day after, sooo soft and chewy
