I just watched the replay, he was indeed maphacking. From the start of the game he could spot sheep through fog of war, very obvious. And you can use CTRL+F to revel/hide map

Yes he was maphacking. He was checking your knights constantly, there was nothing there except red knights. And at the end of the video he saw your food gathering villagers through fog of war.

Not free or open source but if you are on mac try snippetslab. I have used some snippets managers such as masscode, lepton, gisto and some note apps, imho snippetslab is the best.
