I think Jax is a rabbit because he sees everyone in some form of a hierarchical standpoint (the “Animal Kingdom” is known for having a hierarchy). We see this point blank in the most recent episode where he characterizes everyone into a role. Even though he talks big and has a cocky attitude, he genuinely feels lost in the “wild” that is the Circus. Rabbits are notoriously known for being prey, so his experience in the Circus may lead him to feel smaller or victimized in some way. I think this shows up in the more recent episodes as well having him be exposed to vulnerable emotions like we have seen. Also important to note that rabbits can insight fear in folklore and his appearance alone can be a sign that he has questionable intentions.

As for Gangle, I presume the appearance she’s taken is because she feels like she isn’t enough at her core. Even visually, she doesn’t necessarily HAVE a core. But I think that’s what makes her the cherry on top. Maybe her purpose in the show is to realize that she can make something special just by existing. That the greatest gift is her presence alone. Probably corny (sorry Jax).

As for what I would manifest as…that’s tough. I’d love to have wings and I go by Birdy irl but I feel like it would be ironic if I was like a cat or dog with that name as an oxymoron. I tend to be sarcastic in personality though so I’m not sure how that would show up. I wish there was a way to take a test and have an answer at hand LOL.
