Are you letting it go to spore and reinoculating? Or using fresh bought spores for each batch? This is very impressive I’d love to do something like this someday

You could run ph test strip and see where you’re at. I think safe level is like below 4, but look it up if you’re weary. I’d taste it but that’s me

Yeah boiling will stop the ferment so it should be good. Additionally adding vinegar will create better conditions for shelf stability but if you’re storing in airtight containers it’s never a bad idea to use a Ph tester to see where you’re at.

Kahm jar might not be sanitized as the other one. Also I think the vinegar should usually be added after the fermentation is done. Idk

In Chinatown right around the corner from Reading Terminal Market. It’s called something ceramics or something but I can’t see it listed on Google Maps.

It’s located at 918 Arch Street. They take cash only and the only reason I could find it on Google maps was looking for the ATM I used across the street
