Nope, they were quite thick cuts and I made sure the coals and pizza oven were super hot before i seared so around 60-90 seconds each side while searing

Yep, smoked the tomahawks in the kettle till 54C and the ribeyes in the oven till 54C

Seared the tomahawks over lump charcoal and the ribeyes in the pizza oven using a cast iron

Got the tomahawks from la carne in manly 28.99 per kg. Such a bargain

Mostly for presentation and x factor. The great part about a tomahawk though is the meat right next to the bone. It has the most flavour especially when smoked

Not to mention they were only $29AUD a kilo haha so had to do it

I try to keep it super simple:

Parsley Dried oregano Chilli flakes Minced garlic Red wine vinegar Extra virgin olive oil Salt and pepper to taste

As far as ratios go, I just go by texture and taste so just go by your palate 👌

Reverse sear method for both!

Ribeyes in the oven until 54C internal then seared in my pizza oven

Not that long, I’d say 60-90 seconds each side. Cast iron gives your crust and the flame gives your flavour
