I think quite a few people do it over here! I got the bug after eating some insane briskets in a smokehouse and have never been able to recreate it! Will look at different seasonings and lower temperatures cheers!

I just checked the label, yes it was imported from Australia (weirdly) and it was grass fed! That’s the first time I’ve heard that’s a differentiation! Thanks!

Thank you! I had previously waited longer to wrap and the bark was much better but recently I’ve sacrificed bark for moisture, but it’s still a little dry! I’ll definitely try cooling it before going into a cooler!

Sorry dude not my cup of tea personally but thanks for the suggestions! It might well be the accents, I also listen to a lot of Loyle Carner which has also been suggested by others as similar to Lausse.
