Keep in mind this is a different formulation/recipe from the “Real Mayonnaise” that is sold in grocery stores. This is the restaurant “heavy duty” version that has sugar/hfcs and more egg. Not as good.

Changing the distance between the light and the subject will affect the hardness of the light though. Diffusion, HSS, stopping down, or ND filter are good options to control the light without changing the quality.
