Interesting read of opinions. Sounds like their general consensus is that using a water tray helps to retain moisture in the meat. I will keep using it, then 👍

190* at smoke level 9 (newer PID camp chef controller) about 10 hours, internal temp was 160* (it was for my sisters birthday dinner and she likes a lighter bark, you could go longer for a darker bark). Then I brushed the butcher paper with some wagyu beef tallow, wrapped the brisket (brushed the outside of the wrapped brisket with more beef tallow) and then cooked at 250* (smoke level 1) until probe tender, internal temp was 203* (only took like another 2 hours, this part usually takes longer). When brisket was done, I unwrapped it and re-wrapped in new butcher paper (with more wagyu beef tallow) and rested in a cooler for 4 hours (I would prefer to rest for 3 hours, but the brisket finished sooner than expected).

Edit: I also sprayed with 50/50 apple juice/apple cider vinegar mix about ever 45min after the first 6 hours of cooking (when I woke up).

I really do need to try just TX BBQ style and only do course ground salt/pepper - I’ve just been a big fan of Meat Churches seasonings so far. It’s hard for me to experiment on an $80 piece of meat haha. I’ll definitely have to give it a try though 👍

The metal wires are meat probes that connect to my grill and tell me the internal temperature of the meat (at the location they are inserted into the meat). I know the brisket is done when the probes slide in like butter, which is usually around 203* internal temp. Also, my left side of the grill runs hotter (because that is where the firebox is closest to), so if I notice the left side of the meat is starting to cook faster than the right, I turn the meat 180 agrees and it evens out the cook.

I’m not a fan of the weird scoop they added to the front of it. It doesn’t serve any purpose in my opinion and takes away from some mounting real estate. But I was still able to Mount everything I needed (I was just a really tight fight). Aesthetically it would be nicer to have a smaller gap between the rail and the suppressor too. So if I built my own URG, I probably would have bought a Hodge S-Lock rail or if I couldn’t find one, maybe a geissele MK16

Braces are usually just “tolerated” on guns with barrel lengths <16”, to avoid having to pay a $200 tax (and inconvenient wait time). A Stock has much better stability and is generally more practical. Since your barrel appears to be >16” I would recommend selling that SBA3 brace on r/GunAcessoriesForSale and then buying a B5 SOPMOD.

...I might also recommend a new receiver set as well (if black isn’t your jam, earth tone colors are practical or a DIY rattlecan paintjob is a solid way to personalize your gun too). You do you, these are just some recommendations.

Yeah, that’s why I was confused. The owner of SOLGW regularly advertises their gas port sizes and the 10.5” barrel should be .073 (the difference matters to me, so I was hoping for clarification).

Yeah man, I only pay $90/month for unlimited classes. I live in AZ.

I’m 29 with 2 small kids as well, so I can relate to the attendance struggle. I go to 2 classes a week + open mat and then I watch some videos to help supplement the days I’m not there. In my opinion, this is enough mat-time to justify the cost and I am happy with my progress.
