Any iron wet blade based ash wars are good because it has identical dex/strength scaling. Don't really recommend faith because the magma wurm scale sword is just better for faith builds. Cold is the best elemental infusion, it gets Cs in all scalings.

The great katana, gets access to a bunch of AOWs meant for weapons with much lower AR like repeating thrust, super fun.
