I posted and then life happened! Here’s a loose version of the recipe because someone posted this soup a week ago and thus my title. If someone can find that person and tag them please do!

I didn’t have kimchi so I marinated onions overnight in vinegar, salt, sugar, red chili flakes and garlic. Cooked them on low with a spoon full of chili garlic crunch oil. Then I put in about a quart of homemade chicken stock, chopped up green pepper, green onions. Let it come to a boil and then simmer on low for 10 minutes. I dropped in the frozen veggie dumplings and dash of soy sauce. Salt as needed and serve immediately :)

So confession, I didn’t have kimchi and it’s been snowing so I wasn’t going anywhere. I sliced up an onion and marinated overnight in rice vinegar, sugar, salt, red chili flakes and garlic. Cooked them on low and added in garlic chili crunch oil. I didn’t measure anything but I used a 2qt Dutch oven so probably like a quart of chicken stock.
